Can I have the default difficulties for each song so I don't put Medium on every single one? Even though it is theme dependant and that the default theme has Easy, Regular, and Hard difficulties for courses it is best to have a set difficulty.

I'll assemble the .crs files as long as they aren't ITG-based courses. If you want mods midplay for certain songs it is better if you do it yourself.
If I do end up doing a modded course it'll be of my choosing since I'm better doing it that way.
